This year Brian was on duty on Easter Sunday (yes, I was sad about this). Anyway, I went over to my friend Catherine’s who has three kids and brought a bacon, egg and spinach casserole and it is delicious. We just hung out with her kids, her cousin (our age) and another officer spouse, Brooke, joined us. Brooke brought a great salad that I have had ever intention on replicating but haven’t yet:

• Spring Mix
• Arugula
• Walnuts
• Goat Cheese
• Green Apples
• Pickled Beats
• Champagne Vinaigrette
